The Story of a Chef

There are chefs who follow established paths: culinary school, a mentor, the kitchen brigade. And then there are chefs who build their own journey step by step, guided by the encounter between cultures, ingredients, and territories. Marcos Cardoso belongs to this second category.

His is a cuisine born from travel. A gastronomic narrative made of cross-pollination, experiences, and traditions that intertwine to create a personal, recognizable, and contemporary style.

A lifelong journey, one dish at a time

Born in Brazil and raised in Spain, Marcos discovered the kitchen as a child alongside his father, a master in fish processing. It was there that his almost sacred respect for raw materials was born: the value of the raw product, the precision of the cut, and the care for details invisible to the eye but fundamental to the palate.

Self-taught by vocation and curious by nature, he embarked on an international path that took him to Austria, where he came into contact with the great Central European pastry tradition and the art of the soufflé, expanding his technical and creative vision.

The journey continued to Palma de Mallorca, where since 2013 he has successfully led Emilio Innobar, a gastronomic laboratory where experimentation and identity meet. Here, Marcos developed a contemporary cuisine that fuses Mediterranean tradition, Latin American influences, and international techniques, creating dishes that tell stories of the sea, travel, and memory.

Today, Marcos Cardoso’s cuisine is a continuous dialogue between distant cultures, authentic ingredients, and creativity, capable of transforming every dish into a unique gastronomic experience.
